Golden flesh, thin skin, sinewy honey, lacy white blossom, and the tartness that keeps the fruit from becoming cloying. It evokes wine even before fermentation begins.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eFor this October release, I worked with spontaneously fermented Mirabelles, allowing the fruit to develop its young culture before fortifying it with ethanol.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eI was interested in the early aromatic changes: the way fresh plum nectar begins to acquire a faint alcoholic warmth, the sweetness becomes more expansive, and new fruity, floral, sometimes confectionary notes emerge. There can be an extraordinary effervescence at this stage. Not necessarily something visible in the finished extract, but a sensation in the aroma itself—lifted, volatile, sparkling.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eUnderneath are the heavier parts of the fruit. The skins, flesh, and heavier soluble constituents contribute their own character, alongside the aromatic compounds produced or altered during fermentation.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eFortification is not the end of that process. Introducing ethanol begins another period of extraction and aging.
