Tamarind absolute
Gelatinous, garnet colored, sour and smoky aroma with notes of tree bark and sandy soil. I made this organic extract from long term tincture of Tamarindus indica fruit pulp, with 95% of the ethanol reclaimed for reuse. Tamarind is native to tropical regions in Africa, although it has been naturalized in the Indian subcontinent. The fruit has a hard shell. As an indehiscent legume, it must be split open manually to remove the soft flesh. This is what I tinctured. Interestingly, the pulp's jelly texture is mirrored in its absolute.
