BING CHERRY ABSOLUTE
Cured Organic Bing Cherry · Eight-Year Extraction · F/W 2026
Dark red juice. Cherry skin. The fruit after its summer.
Bing Cherry begins with the luxuriant character of a dark sweet cherry: richly colored skin, succulent flesh and the particular balance of sweetness and acidity that distinguishes ripe stone fruit.
But the aroma of cherry is more complex than its familiar confectionary representation.
Fresh cherry can contain bright, green-fruity impressions alongside its deeper sweetness. The skin contributes another dimension, with a more restrained, sometimes slightly astringent quality that contrasts with the juice.
The familiar almond-like associations of some cherry fragrances are not the same thing as the aroma of intact cherry flesh.
For this absolute, I began with cured organic Bing cherries.
The fruit remained in tincture for eight years before I evaporated the solvent to obtain the concentrated absolute.
The resulting material is an extraction of actual cured cherry, not a reconstruction of cherry candy, maraschino syrup or an almond-cherry accord.
The aromatic territory is one of dark red fruit in transition.
Succulent cherry flesh moving toward cured fruit. Bright sweetness against the deeper impression of dried cherry. Skin, juice and the suggestion of wine-dark fruit.
There is something especially compelling about the contrast between cherry's brief fresh-fruit season and the prolonged extraction of its cured form.
Summer fruit, carried into a much longer aromatic history.
Bing Cherry belongs beside Angelino Plum and Apricot as the third member of the stone-fruit study.
The three share a botanical relationship, but their proportions of sweetness, acidity, skin character and aromatic constituents differ.
Those differences become the subject of the extraction.
Aromatic territory: Dark sweet cherry · red fruit skin · cured cherry · dried-cherry associations · tart-sweet flesh · wine-dark fruit.
Extraction: Cured organic Bing Cherry → eight years of tincture maceration → solvent evaporation → concentrated absolute.
Collection: CURED FRUIT · THE EIGHT-YEAR ABSOLUTES · F/W 2026.
