Muscat is an exceptionally interesting aromatic family of grapes.
Unlike the comparatively neutral aroma of some table grapes, many muscat cultivars possess a pronounced floral-fruity character, often associated with monoterpenes such as linalool, geraniol and related compounds.
The effect can be astonishingly perfumelike.
Fresh muscat may suggest floral grape skin, nectar, citrus blossom, honeyed fruit and the distinctive aromatic brightness that makes muscat so recognizable.
Curing introduces another dimension.
As the grape becomes a raisin, the skin contracts around the flesh, moisture diminishes and the relationship between fresh grape volatiles and more persistent fruit constituents changes.
The resulting fruit can occupy a sensory territory between honeyed grape, dried fruit, floral sweetness and the deeper associations of raisin and dessert wine.
For Muscat Raisin Absolute, I began with cured organic muscat grapes.
The raisins remained in tincture for eight years before I concentrated the extraction through solvent evaporation.
This is not a muscat accord assembled from floral and fruity aromatics.
It is an extraction of the actual cured fruit.
I am especially interested in the tension between muscat's naturally floral aromatic character and the darker, more concentrated qualities of the raisin.
Grape skin against honeyed flesh.
Floral brightness against dried-fruit depth.
The suggestion of muscat wine without the need to introduce wine into the composition.
The fruit has left the vine, but its aromatic identity continues to invite investigation.
Muscat Raisin completes the vine-fruit portion of the collection, extending the study beyond bananas, berries and stone fruits into the fragrant world of the grape.
