Raspberry beneath the skin. Rum in the flesh.

Red Banana Absolute begins with organic red bananas, cured before extraction, then macerated in tincture for eight years before being concentrated through solvent evaporation.

An exceptionally strange expression of banana.

Raspberry and red fruits are folded into honeyed rum, bruised tropical flesh, caramelized sugar, faint clove, resin and a soft, leathery warmth.

The banana is still there, although not in the familiar yellow, confectionary register.

Its character moves between fruit skin and pulp, red berries and overripe tropical flesh. Beneath the sweetness is a green, almost latex-like memory of the original fruit, with a suggestion of banana leaf and the faint animalic quality of fruit passing beyond ordinary ripeness.

When I examined this material earlier in its long tincture aging, I was struck by the way its green sap and fruit-skin character had deepened into rum-soaked fruit, spice and soft animalic warmth.

After eight years of maceration, I concentrated the extraction into absolute form.

The resulting aromatic material occupies a curious territory between tropical flesh and red fruit.

Caramelized flesh, clove, resin, a leathery trace.

The impression is almost fermented, although the fruit was cured rather than deliberately fermented: a soft, wild ripeness with the warmth of fruit left too long in the sun.

No raspberry, rum or clove was added to create these impressions. They describe aromatic facets of the cured banana extraction itself.

Not a reconstructed banana accord.

A banana that has moved beyond the familiar fruit and into something redder, darker and more feral.
