CAVENDISH BANANA ABSOLUTE
Cured Organic Cavendish Banana · Eight-Year Extraction · F/W 2026
The ordinary banana, at an extraordinary point in its transformation.
Cavendish is so familiar that its aromatic complexity is easily overlooked.
The banana of supermarket shelves, lunchboxes and kitchen counters is also a remarkably rich botanical starting material: soft, sweet, ester-laden flesh with a recognizable banana signature and a much broader aromatic vocabulary beneath it.
Its familiar aroma is only one expression of the fruit.
In my work with spontaneous fermentation, Cavendish has revealed an astonishing affinity for dessert-like aromatic associations. In a co-ferment with Satsuma plum, the shared fruit culture produced an extraordinarily lush, foamy scentscape suggestive of rum cake, custard, brioche, bread pudding and banana flambé.
Those observations belong to the co-ferment, rather than this absolute, but they reveal why I find Cavendish so compelling as an aromatic material.
The fruit contains far more possibilities than its familiar fresh-banana identity suggests.
For this absolute, I followed a different route.
Organic Cavendish bananas were cured before extraction, then macerated in tincture for eight years. After that prolonged extraction, I evaporated the solvent, concentrating the aromatic material into its finished absolute form.
No deliberate fermentation was involved in this preparation.
Instead, the fruit was transformed through curing, prolonged solvent contact and concentration.
The resulting material is an extraction of actual cured Cavendish banana, not a reconstructed banana accord.
Placed beside Red Banana Absolute, it becomes part of an unusually revealing cultivar study.
Red Banana travels toward raspberry, red fruits, honeyed rum, spice and soft leather.
Cavendish begins with the familiar sweetness and ester-rich character of the world's most recognizable banana, then enters its own history of curing and extraction.
Two bananas, subjected to the same broad process.
Two different botanical identities.
The rarity is not necessarily in the ingredient.
Sometimes it is in the transformation.
Aromatic territory: Cured Cavendish banana · ester-rich tropical fruit · soft, sweet banana flesh · concentrated botanical character.
Related aromatic study: Satsuma Plum + Cavendish spontaneous co-ferment, with its custard, rum cake, brioche, bread pudding and banana flambé associations.
Extraction: Cured organic Cavendish Banana → eight years of tincture maceration → solvent evaporation → concentrated absolute.
Collection: CURED FRUIT · THE EIGHT-YEAR ABSOLUTES · F/W 2026.
