Mirabelle Plum — Young Culture

Whole Fruit Perfume Extract | October 2026 Micro Release

Spontaneous fermentation · Young culture · Ethanol fortification · Botanical extraction and aging

Mirabelle plum has a fine, translucent sweetness. Golden flesh, thin skin, sinewy honey, lacy white blossom, and the tartness that keeps the fruit from becoming cloying. It evokes wine even before fermentation begins.

For this October release, I worked with spontaneously fermented Mirabelles, allowing the fruit to develop its young culture before fortifying it with ethanol.

I was interested in the early aromatic changes: the way fresh plum nectar begins to acquire a faint alcoholic warmth, the sweetness becomes more expansive, and new fruity, floral, sometimes confectionary notes emerge. There can be an extraordinary effervescence at this stage. Not necessarily something visible in the finished extract, but a sensation in the aroma itself—lifted, volatile, sparkling.

Underneath are the heavier parts of the fruit. The pulp, the skins, the dense honeyed sweetness of ripe Mirabelle, and the beginnings of something resembling young plum wine.

Aromatic impressions

Golden Mirabelle nectar · warm plum skin · honeyed flesh · white blossom · fruit esters · young plum wine · champagne mousse · soft yeast · translucent syrup · fine tartness

The material begins with the fruit itself, rather than an assemblage of separate notes intended to approximate its fragrance.

I think of this as a whole-fruit perfume extract because I'm interested in more than the most immediately volatile aromatics. The skins, flesh, and heavier soluble constituents contribute their own character, alongside the aromatic compounds produced or altered during fermentation.

Fortification is not the end of that process. Introducing ethanol begins another period of extraction and aging. Different constituents move into solution, the aromatic balance changes, and the material continues to develop as the maceration matures.

The young culture is the point at which I chose to fortify the fruit, not the end of its aromatic development.

Mirabelle Plum — Young Culture is an October 2026 micro release, produced in a very small quantity.
