A young aromatic culture of estate-grown Musk Strawberry, captured during its effervescent stage and fortified while the fruit was still in transformation.
This is not a strawberry tincture.
Fresh Musk Strawberry begins already somewhere between fruit, flower and skin: intensely fragrant berry, tiny woodland flowers, green calyx, rose-violet powder and an unusual botanical musk. Spontaneous fermentation pulls those qualities apart and recombines them.
In the young culture, strawberry becomes froth.
Crushed berries rise into strawberry foam, pink champagne mousse and the head on a young fruit wine. Fleeting esters suggest strawberry drops, pear drops, pink bubblegum and fruit pastille—not the flat sweetness of artificial strawberry, but volatile impressions appearing and disappearing above the fruit.
Beneath them is something unexpectedly creamy: strawberry milk, cultured cream, soft yogurt tang and crème fraîche, threaded with the cool pollen of tiny flowers.
And then the musk emerges.
Warm skin beneath cold fruit. Rose, violet and orris hovering around the berry. Young rosé, pét-nat, lees and a fine yeasty veil. The sweetness remains alive against green calyx, leaf and the cool vegetal character of fruit ripening at the edge of the Vermont season.
Fortification arrests the culture while these aromatic states are still overlapping—before fermentation settles into something quieter and more vinous.
The result is neither fresh fruit nor finished ferment.
It is strawberry in transformation.
