BLUEBERRY ABSOLUTE
SPONTANEOUSLY FERMENTED FRUIT · F/W 2026
The dark fraction.
An exceptionally unusual botanical aromatic material derived from spontaneously fermented blueberries, ethanol fortification and subsequent concentration.
Natural blueberry aromatics are uncommon in fine perfumery. Blueberry is far more frequently encountered as a reconstructed fragrance accord than as an aromatic material extracted directly from the fruit.
This material follows a different path entirely.
I began with actual blueberries from my family's organic and unmanaged 45 year old Vermont bushes and allowed them to undergo spontaneous fermentation, rather than introducing a standardized commercial culture.
The fruit's own microbial environment participated in its aromatic transformation, developing qualities beyond the familiar sweetness of fresh berries.
I subsequently fortified the fermentation with ethanol, initiating another stage of extraction and aging.
During concentration, something remarkable happened.
A dense, dark, intensely aromatic fraction began to separate and ooze from the material.
Dark skins. Crushed flesh. Staining juice. The raw, almost bodily intensity of concentrated fruit. An unruly aromatic character that has passed through fermentation, fortification and extraction without losing its connection to the original blueberries.
Spontaneous fermentation can alter a fruit's volatile aromatic profile, generating and transforming odor-active compounds. Ethanol fortification then introduces another extraction and aging environment.
The resulting material is not simply a more concentrated version of fresh blueberry.
It is an aromatic record of the fruit's transformations.
The sequence of spontaneous blueberry fermentation, ethanol fortification and concentration is exceptionally unusual within fine perfumery, where fruit notes are typically reconstructed rather than produced through this kind of botanical extraction.
This is not a commercial blueberry accord. It is an extract derived from the fruit itself.
Produced in a very small batch.
The fruit is no longer simply fruit. It has become a record of its own transformation.
